Sunday Dinner!

Yesterday, after a day of cleaning up leaves at our house and then the afternoon working on Nana’s yard we were ready for a good dinner! This recipe is so easy and is the lazy way of making stuffed cabbage!

Total grocery bill was 8.20 – and I still have some tomato juice left so it was cheaper than that to make!

Stuffed Cabbage Casserole

1 Medium Head cabbage
1 1/2 lb. lean ground chuck
2/3 cup rice (uncooked)
garlic salt and salt to taste
1/2 cup chopped onion
1 egg
1/2 cup tomato juice

Precook cabbage in water until wilted. Mix together meat, rice, egg, garlic salt/salt, and chopped onion, and tomato juice. Take 1/2 cabbage and line the bottom of a 13×9 casserole dish with cabbage. Then top cabbage with the meat mixture. Then top meat mixture with rest of cabbage.

Sauce for top
1 can tomato soup
1 1/2 cup tomato juice
1/2 cup water

Pour sauce over top and cover with foil and bake for 1 1/2 hours at 350 degrees. Take foil off to brown if desired.
